Recipe of the Month

Omelette
Six eggs beaten separately, whites very stiff.
Add to beaten yolks three-quarters cup white sauce, pepper and sauce to taste.
Put a dessert spoon of butter in frying pan, then the yolks and then the beaten egg whites.
Let stand over moderate fire until brown underneath; brown the top in the oven.
Fold and turn into platter, pouring the remainder of the sauce over omelette.
Sauce
Two tablespoons of butter, two tablespoons flour cooked into butter;
then add two cups of milk very slowly, stirring until it thickens.
