First of three FALL FAVORITES From 1927

Apple Whip

Steam enough sour apples to make one pint sauce; add a little sugar; beat white of egg and stir in the sauce; put in dish in which it is to be served.

Make custard of yolks 4 eggs, two-thirds cup sugar, three tablespoons cornstarch, one quart milk; flavor with lemon.

Place this over the apple.

Beat whites of eggs to a stiff froth, add three dessert spoons sugar; place on top and brown.
