Recipe of the Month

Omelette

Six eggs beaten separately, whites very stiff.

Add to beaten yolk 3 quarters cup white sauce pepper and salt to taste.

Put a dessert spoon of butter in frying pan, then the yolks and then the beaten whites.

Let stand over moderate fire until brown underneath; brown the top in the oven.

Fold and turn into platter, pouring the remainder of the sauce over the omelette.

Sauce:

Two tablespoons of butter, two tablespoons flour cooked into butter; then add two cups milk very slowly, stirring until it thickens.
