Surpassing Home-Made Sausage
Have meat from young pork, as nearly half lean and half fat as possible; cut up fine in food cutter.
Seasoning: For every two pounds chopped meat take one level teaspoon salt, a heaping tablespoon sage, one and a half teaspoons pepper.
Mix together and work into the meat with your hands, sprinkling on a little at a time.
Pack into an earthen dish and keep in a cold place.
Slice it off for frying.
